Follow these steps to change the Publish status of a Product.
Got Products > All Products and choose the Product whose status you want to change.
Under the Publish panel, click Edit (highlighted below).
Then click Published (highlighted below) and from the new options choose Draft.
Next, click OK and Update (highlighted below).
The product will now be removed from the frontend of the website, but will still be available under Products.
